Vineyard | Vineyards of the 'Aquilaia dei Barbi' estate, owned by the Fattoria dei Barbi in the Municipality of Scansano and registered in the production of Morellino di Scansano. Soil: clay, limestone, skeleton. Altitude: 250 m asl. Average age: 14 years. Exposure: East – South – West. Training system: Simple Cortina. Vines per hectare: 5,000. Yield per hectare in quintals: 90. |
Vinification and Aging | The crushed-destemmed grapes are placed in tanks where the normal alcoholic fermentation lasts about 12/13 days at a controlled temperature of 27-28 ° C. The refinement lasts about 6 months, partly in steel tanks and partly in oak barrels. |
Sensory analysis | Color: medium intensity ruby red with purple hues. Bouquet: of small red fruits mixed with ripe cherries, hints of myrtle and Mediterranean scrub. Taste: warm taste with round tannins, savory, fresh and vibrant backbone with notes of green tobacco in the aftertaste. "Fresh" wine, marketable from the spring following the harvest. |
Food Pairing | Ideal for savory meat dishes, roasts, wild boar “scottiglie” typical of Maremma cuisine, particularly savory meats and cheeses. Excellent combination for fish soups and in general any type of fish cooked with spices or tomato sauce. |
