Average age of the vines : 15 years.

SURFACE AREA : 1 hectare Plot located at the place called “Bastys”.

SOIL : Composed of deep granitic arena. At 500 m altitude.

CULTURE : Vines certified in organic farming. Cordon pruning at 6200 vines/ha Alternation of soil plowing and permanent natural grassing between rows.

HARVEST : Exclusively manual in small 300 kg bins with rigorous sorting at the plot level.

VINIFICATION : Strict carbonic maceration (without juice) for 20 days. Without sulfur or yeast.

MATURING: 80% in 225-litre barrels and 20% in vats for 8 months. Racking and bottling, without filtration and according to the moon cycle.
