For this white wine made from red grapes, only healthy Pinot Noir grapes were selected and harvested by hand shortly before they were fully ripe. Immediately after the harvest, a gentle whole-cluster pressing took place, as is also carried out in the champagne base winemaking, among other things. As a result, a clear, light-colored juice could be obtained without the red pigments separating from the berry skins. After a temperature-controlled fermentation, the Blanc de Noir remained on the full lees for several months.
