Description

Thibaud Boudignon Anjou Blanc comes from 35-year-old vines planted in deep soils of gray shale and volcanic rock. Convinced that grape quality is the most important factor, he uses 100% organic agriculture and no chemical products. Planting density is limited to 8,000 vines / ha. The harvest is carried out manually and the yields are much lower than what is required by the AOC. In the winery, the Thibaud Boudignon Anjou Blanc grapes are selected and gently pressed. The must ferments in stainless steel tanks with native yeasts for 2 to 3 weeks and ages in 300-litre and 750-litre barrels for 15 to 18 months; 30% of which are new.
