Wine Specs: | Grapes: Sangiovese |
Vinification and Aging: | After vinification in red (with careful maceration) and the malolactic fermentation, the wine is aged for a short but important period in small oak barrels. |
Producer: | Tenuta Sassoregale lies on the eastern edge of the broad Ombrone river plain in the municipality of Civitella Paganico, in the province of Grosseto, covering some 38 hectares, of which 30 are planted to vine. The vines of Sangiovese, which makes up the bulk of the stock, Merlot, Syrah and Cabernet Sauvignon are at an elevation of between 100 and 150 metres above sea level. They stand on fertile, deep, moderately loose-packed soil with a prevalent clay fraction, although a small portion, planted to Syrah, has a more pebbly texture and a fraction of sand. The training system used is spurred cordon and planting density is high at more than 5,000 vines per hectare. Special agronomic techniques strive to keep impact on the environment low, ensuring the clusters reach technological, phenolic and aromatic ripeness. Conditions are ideal for producing wines of depth and elegance, presenting fragrant, soft-textured, mouthfilling and sumptuous. Cellar operations are carried out with the utmost care during both fermentation with skin contact and maturation of the wine in small wood. The aim is to obtain products that reflect as faithfully as possible the qualities of both territory and variety, enhancing the wines’ aromatics, flavours and texture |
Food Pairing: | Ideal with grilled red meats, but also with seasoned salami and pecorino cheese from the Tuscan tradition. |
