The grapes are harvested at optimum maturity by a mechanic or handpicked. Harvesting is realized during the night or early in the morning to preserve the freshness. At reception, grapes are directly pressed. Alcoholic fermentation between 16 and 18°C. Maturation on lees during 2-6 months.
