The grapes for this wine were gently pressed for ten hours and then spontaneously fermented in an old barrel (1,200 liter wooden barrel).
This wine focuses more on the earthy and herbal components than fruity flavors. A wine that only reaches its full size after a few years of aging in the bottle.
