Description
Domaine Vacheron is a family winery in Sancerre run by the third generation of the family. They make traditional Jura wines. They are located in the village of l’Etoile and their vineyards consist mainly of Chardonnay, but they also cultivate a little Savagnin – 1.7 hectares of the 9 that they own. They cultivate organically, without certification.The vineyards for Domaine de Montbourgeau L’Etoile Cuvee Speciale are planted on stony and limestone soils rich in pentacrinites, fossils in the shape of a star that probably gives its name to this denomination located in the heart of Jura.
The grapes forDomaine de Montbourgeau L’Etoile Cuvee Speciale are harvested manually. They ferment with native yeasts in stainless steel tanks without temperature control. The wine then goes into the barrel and there, after malolactic fermentation, a light veil of yeast forms on the surface. It remains ageing for 4 or 5 years, and thus has a very marked oxidative quality.
