Like its limestone sand terroir from which it takes its name, the Silice cuvée is imbued with finesse. The grapes, carefully harvested, are fermented with natural yeasts to enhance their character. A winemaker’s wine, without frills, it offers sincere and immediate fruit.

Description

The origins of the property date back to the mid-19th century , when our ancestors bought a few plots of land and a small farm. The farm was then made up of various crops (meadow, garden, cereals, olive trees, vines, etc.). It was after the Second World War that René BOISSON (Bruno’s grandfather) developed the estate. Following the frost of 1956, he decided to replace the frozen olive trees with vines. At that time, he also bought a 10-hectare wood in Largarde-Paréol, which he cultivated. In 1957, René BOISSON left the Cooperative Cellar to create his own cellar. The arrival of tractors allowed Régis Boisson to expand the estate. The first bottle bearing the Domaine Boisson label was bottled in 1986. Régis and Bruno bring experience and reflection, allowing them to bring a different vision to viticulture and oenology.

At Domaine Boisson, the spirit that guides the cultivation choices lies in the conviction that the grape is the crucial point of the wine. This results in a work of patience and observation, of daily choices to bring this grape to the highest degree of definition. The vines are cultivated in Organic Agriculture (Certification in 2020), the soils are plowed, manual work accompanies the vines throughout the year. In the cellar too, the vinification comes to accompany this grape. Respect is the key word in the cellar, the grapes are destemmed or not depending on the vintage and/or the grape variety, the macerations are gentle, the aging is done either in concrete vats or in large capacity barrels (Foudre and demi-muids) to respect the fruit as much as possible.

In conclusion, there is first the vine and nature that give the fruits their identity and character. Then there is a spirit of delicacy and respect in the monitoring of these grapes from the vine to the bottle… A pure and magical theater of beauty and history that endows the substance of the wines of Domaine Boisson.
