Vinification

Vinified under strict supervision of the Orthodox Union (OU). It is a certified high-level cashier wine: Lo mevuixal (not pasteurized) and Le Pessaj (suitable for the Jewish Passover). Indentation method, do not press the grapes directly. Short maceration, from 4 to 6 hours. Temperature controlled fermentation (13- 15ºC)
Development

In stainless steel tub 4 months before bottling.

Grapefruit grapefruit (25-50 years old).
Clay soils and granite, on terraces.
