Flatbread Pizza with Fresh Tomato Salad

Prep time: 20 minutes.
Cook time: 10 to 15 minutes.

  • 1 lb. pizza dough
  • Flour
  • 2/3 cup sun-dried tomato spread
  • 12 oz. fresh mozzarella, thinly sliced
  • 2 cups small red and yellow pear or grape tomatoes, halved
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1/4 cup snipped fresh basil

Preheat oven to 450°F and line 2 baking sheets with parchment paper. Divide dough into 2 equal portions and roll each into a fairly thin oval on a lightly floured board (about 10 x 14-inches). Place on prepared baking sheets and spread a thin layer of sun-dried tomato paste onto each. Top with cheese then bake for 8 to 10 minutes or until crust is golden brown. While pizza bakes, toss together tomatoes, oil, lemon juice and garlic in a medium bowl. Spoon onto cooked pizzas and cut into squares; sprinkle with basil.

Makes 8 main dish or 12 appetizer servings.

Mango Caprese Salad with Chardonnay

Prep time: 15 minutes.

Ingredients:

  • 3 large, ripe mangos, peeled, pitted and sliced*
  • 8 ounces fresh mozzarella cheese, sliced
  • 3 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra virgin olive oil
  • Sea salt and freshly ground pepper to taste
  • Snipped fresh basil
  • Crusty toasted baguette slices

Cooking Directions:

Place mango slices on platter, alternating with mozzarella slices. Drizzle with lemon juice and oil and season with salt and pepper. Sprinkle with basil and serve with baguette slices.

Coconut Curry Lime Mussels

Mussels:

  • 1 small diced shallot
  • 2 finely minced cloves of garlic
  • 1 small diced and seeded jalapeño
  • zest of 1 lime
  • juice of 1 lime
  • ½ ounce of unsalted butter
  • 2 heaping tablespoons of red curry paste
  • 2 pounds of fresh or frozen mussels
  • 1 cup of white wine
  • 1 cup of coconut milk
  • Kosher salt and cracked pepper to taste
  • ½ cup of fresh cilantro leaves

Goat Cheese Spread:

  • zest of 1 lemon
  • juice of 1 lemon
  • 4 ounces of softened goat cheese
  • 1 loaf of Artisan bread

Serves 2 to 3

Procedures:

  1. Mussels: In a large hot sauté pan with butter, add in the shallots, garlic and jalapeño and caramelize. Once brown, add in the curry paste and sauté for 2 to 3 minutes.
  2. Next add in the mussels and sauté for 2 to 3 minutes. Deglaze with wine, then add in the coconut milk, lime zest and lime juice and let braise on medium-high heat until the mussels open up. Adjust the seasonings with salt and pepper.
  3. Goat Cheese: In a medium sized bowl whisk together lemon zest, lemon juice and goat cheese until completely combined. Spread the goat cheese on slices of Artisan bread.
  4. To Plate: Simply pour the mussels into a large bowl and top off with fresh cilantro leaves. Serve the mussels along side the to goat cheese, bread and with a chilled glass of Starborough Sauvignon Blanc.

Duck Rillettes

Fat is Flavor!

Long ago, before refrigeration, meat was made into a confit, which meant it was rubbed with salt, herbs and spices then cooked and stored in fat, to preserve it for the winter ahead when there would be little fresh meat available. These vats of fatted meat would be stored in the cool cellar for months with no adverse effect – the salt cured the meat and inhibited bacterial growth and the fat sealed out air. Pork and duck rillettes, duck leg confit and whole goose livers in fat gave the farmers and village people the extra energy necessary to keep warm and go about their winter labor. Any meat, game or poultry made into a confit is flavorful and succulent.

I like to make confit when the weather turns cold. Not that I don’t sometimes make it in the summer, I just think it makes more sense to have the oven on for a few hours when it can do double duty and also heat the house. Bulky cold weather sweaters also help to hide the end result of gorging on duck confit and one of my favorite by products of confit – Rillettes!!

Rillettes make a great partner to fragrant, fruity and high acid white or red wines. I particularly enjoy rillettes slathered on homemade sesame crackers washed down with RSV’s Los Carneros Pinot Noir. Sesame pulls the rillettes and crackers together to make a taste sensation and the crunch of the crackers offset the rich fattiness of the rillettes.

There are plenty of commercially available rillettes if you don’t have time for homemade. I do recommend making your own crackers if you go this route. The crackers are simple to make and won’t take up a lot of your time.

Duck Confit

In the Jordan kitchen, there is always a batch of this confit recipe in some stage of preparation. Whether it is showcased in risotto, terrines, cassoulet, rillettes or simply warmed through and crisped on the bone in a cast iron pan, duck confit makes for a versatile ingredient or main course.

Ingredients

  • 1 Tbsp Sarawak black peppercorns

  • 1 Tbsp coriander

  • 1 star anise

  • 6 duck legs with thighs

  • 3 Tbsp sea salt

  • 1½ Tbsp Demerara sugar

  • 2 bay leaves

  • 5 marjoram sprigs 

  • 10 thyme sprigs 

  • 3 shallots, sliced

  • 3 garlic cloves, crushed

  • 5 cups duck fat


In a large non-reactive bowl, combine toasted spices, sea salt, sugar, herbs, shallots and garlic. Press duck legs into mixture to coat each leg evenly. Tightly cover bowl and marinate in the refrigerator for 24 to 48 hours.

Preheat oven to 200°. In a small saucepan, melt the duck fat. Remove duck legs from the refrigerator and carefully brush marinade from the legs. Arrange the legs in a single, tight layer in an earthenware casserole or heavy lidded 6-quart stock pot. Pour the melted duck fat over the duck legs to cover and place in the oven.

Allow to cook gently until meat is easily pierced and nearly falls away from the bone, approximately 4 to 5 hours. Remove duck from oven, cool and store the duck in the fat. The confit can be stored for a minimum of one week and up to one month, but should be salted a day before you plan to cook it.

Scallops with Almond, Curry & Red Wine Reduction

A luscious flavor combination that brings out the character of the scallops, and adds a touch of the exotic to the mix. This is a great way to express your affection for special friends.
Ingredients:
  • 12 dry sea scallops
  • Kosher salt
  • Fresh black pepper ground
  • Almond Romesco
  • 2 cups blanched almonds
  • 1 bunch flat leaf parsley
  • 1 clove peeled garlic
  • Juice of one lemon
  • ¾ cups Spanish Blend extra virgin olive oil
  • Bread crumbs (approx. 1 cup)
  • Red wine reduction
  • 3 cups Cline Cellars Sonoma Coast Pinot Noir
  • ¼ cup raw sugar
  • Curry oil
  • 1 tbsp. yellow curry powder
  • 2 cups grape seed oil


Directions:

  1. In a food processor combine the nuts, garlic and parsley. Blend till coarse ground, add the lemon juice. Slowly add in the olive oil and puree to a loose pesto consistency. Remove the mixture from the bowl and place in a clean mixing bowl. Slowly stir in the breadcrumbs to lightly bind the mixture. Season with salt and set aside. May be made up to two days in advance and stored in the refrigerator. Bring up to room temperature before serving.
  2. Place the wine and sugar in a small sauce pan. Reduce till light syrup consistency.
  3. Combine the curry powder and the oil in a small sauce pan. Heat on low heat until aroma from the curry develops.
  4. To Assemble: Sear the scallops in a hot pan with a little oil till golden brown season with salt and pepper, flip and repeat. When the scallops are just warmed through remove from heat. Place the almond romesco in the middle of the plate, top with the scallops, drizzle a little of the curry oil & red wine reduction around the scallops. Serve.

PREP
1 lb. pasta of your choice
1 tbsp. olive oil
1 cup pumpkin puree
1 minced garlic clove
3 tbsp. butter
2 tbsp. flour
2 cups whole milk
1/2 tsp. onion powder
1/2 tsp. sea salt
pinch of nutmeg
3 cups freshly shredded cheddar cheese
8 strips bacon, cooked
1/3 cup bread crumbs

MAKE
Boil water and cook pasta until desired tenderness. Drain and set to the side.
Preheat your oven to 350 degrees F.
In a medium or large pan, add a small coating of olive oil. Then sauté your garlic for a minute.
Then, melt the butter with the garlic. When melted, slowly whisk in the flour. Continue cooking and whisking for a minute.
Slowly mix the milk in until smooth. Continue to cook the mixture while stirring frequently until your mixture bubbles. At this point, reduce the heat to low.
Next, stir in your spices- onion powder, salt, and nutmeg, adding pumpkin puree until smooth. Then add your shredded cheese. Whisk the cheese until smooth.
Remove from heat, add your pasta, and stir. Next, add your chopped bacon and stir.
To top off, sprinkle the bread crumbs over top and add a handful of shredded cheese.
Cover with a lid and bake for about 20 minutes until the cheese is melted and smooth in texture.

Baked Chicken Thighs with Feta, Lemon and Capers

Ingredients
6 chicken thighs
1/4 c. olive oil
salt and pepper

1 T. red wine vinegar
1/4 c. lemon juice
1 T. dried oregano
3-4 cloves garlic
2 bay leaves
2 T. brown sugar
1/4 c. white wine
2 T. capers
3 oz. feta cheese, crumbled

Preparation
Place chicken thighs in a shallow casserole dish. Season with salt and pepper on all sides. Toss with the olive oil, vinegar, lemon, oregano, garlic and bay leaf. Cover and marinate overnight in the refrigerator.

Preheat the oven to 375°F. Bring the chicken to room temperature. Set chicken skin side up in the casserole dish. Top each piece of chicken with a little brown sugar. Add the white wine to the pan, scatter the capers around the dish and crumble the feta over the top. Cover and bake for 30 minutes. Remove the foil and continue cooking for another 20 minutes until tender and beginning to brown.

INGREDIENTS:

3 Tablespoons Worcestershire sauce
3 Tablespoons soy sauce
1 teaspoon minced garlic
2 Tablespoons olive oil
¼ cup dry red wine
2 Tablespoons red wine vinegar
1–2 thick top sirloin steaks, about 1¾–2 pounds total
½ lb. very large fresh mushrooms (portobello or porcini)
Olive oil for brushing mushrooms
1–2 teaspoons truffle oil
1 Tablespoon fresh tarragon leaves, chopped

INSTRUCTIONS:

Mix first 6 ingredients in a flat non–reactive dish. Add the steak and turn to cover both sides well. Cover and marinate in refrigerator for several hours, turning once.

Bring meat to room temperature while you prepare a medium–hot barbecue fire. Quickly rinse and dry the mushrooms. Drain off marinade from meat and bring it to a low boil for 1 minute in a small saucepan.

Brush mushrooms generously with marinade and cook them and steak on the hot grill, brushing mushrooms with marinade 2–3 times more and turning both as needed. Mushrooms need less heat and will be cooked first; remove them and continue cooking meat until it reaches desired doneness. Remove steak from heat and let it rest with mushrooms in a warm place for several minutes.

INGREDIENTS (serves 4):
1 block of tofu, the 'firm' variety, not the soft 125 ml soy sauce
4 tablespoons mirin 1 tablespoon lime juice
1 tablespoon very finely chopped ginger
1 tablespoon very finely chopped garlic
200 grams sushi rice
400 grams bok choy 50 grams mini corn, blanched for 1 minute in boiling water
1 red pepper, in rings 1 spring onion, sliced
1 tablespoon sesame oil
2 tablespoons sunflower oil
1 teaspoon black sesame seeds a
few tablespoons cornstarch

PREPARATION:
1 For the teriyaki, mix the soy sauce with the mirin, lime juice, ginger and garlic. Let it rest for an hour to allow the flavors to soak into the soy sauce.
2 Wash the sushi rice well first, then cook it for 12 minutes on low heat in equal parts water and rice.
3 Cut the tofu into whatever shape you want and let it drain well between kitchen paper.
4 Add the tofu to the cornstarch and fry it in the sunflower oil until golden brown and crispy. When the tofu is golden brown, deglaze it with the teriyaki sauce, turn the heat to low and reduce until the sauce is nice and viscous and sticks to the tofu.
5Fry the bok choy over high heat in some sesame oil, add a dash of soy sauce and a dash of water and simmer for two minutes with a lid on the pan so that it remains nice and crispy.
6 Spoon the rice onto the plates and add the bok choy and the slices of tofu. Sprinkle the tofu with the sesame seeds. Garnish the plate with the minimais, spring onion and red pepper.

Grilled Skirt Steak with Shiso Chimichurri

INGREDIENTS

1 bunch red or green shiso, finely chopped
1 tbsp fresh oregano, finely chopped
1 c extra virgin olive oil
2 tbsp sherry or red wine vinegar
Pinch of ancho chili powder
Pinch of garlic powder
1.5 lbs whole skirt steak, trimmed (we used True Grass Farms)
Salt and Pepper

INSTRUCTIONS

Mix together first six ingredients to make chimichurri and set aside for at least one hour.

Light charcoal 30 minutes in advance to build a good coal bed.

Place steak on a rack and season generously with salt on both sides. Move steak to grill over medium-high heat and leave untouched on first side for 3 minutes.

Flip steak and cook on second side for 3-4 minutes, adjusting coals if heat seems too hot.

Season steak with pepper as it is coming off the grill.

Place steak in baking dish or other container and pour chimichurri over the top; allow to rest, uncovered for at least 10 minutes, flipping halfway through. Reserve excess chimichurri for garnish.

Place chimichurri-marinated steak back on the grill to reheat over medium-high heat for no more than one minute per side.

Slice steak against the grain (going with the grain results in a steak that is tough).

Place on a platter and spoon some of the extra chimichurri on top
