- 1 lb. pizza dough
- Flour
- 2/3 cup sun-dried tomato spread
- 12 oz. fresh mozzarella, thinly sliced
- 2 cups small red and yellow pear or grape tomatoes, halved
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 clove garlic, minced
- 1/4 cup snipped fresh basil
Preheat oven to 450°F and line 2 baking sheets with parchment paper. Divide dough into 2 equal portions and roll each into a fairly thin oval on a lightly floured board (about 10 x 14-inches). Place on prepared baking sheets and spread a thin layer of sun-dried tomato paste onto each. Top with cheese then bake for 8 to 10 minutes or until crust is golden brown. While pizza bakes, toss together tomatoes, oil, lemon juice and garlic in a medium bowl. Spoon onto cooked pizzas and cut into squares; sprinkle with basil.

Coconut Curry Lime Mussels
Mussels:
- 1 small diced shallot
- 2 finely minced cloves of garlic
- 1 small diced and seeded jalapeño
- zest of 1 lime
- juice of 1 lime
- ½ ounce of unsalted butter
- 2 heaping tablespoons of red curry paste
- 2 pounds of fresh or frozen mussels
- 1 cup of white wine
- 1 cup of coconut milk
- Kosher salt and cracked pepper to taste
- ½ cup of fresh cilantro leaves
Goat Cheese Spread:
- zest of 1 lemon
- juice of 1 lemon
- 4 ounces of softened goat cheese
- 1 loaf of Artisan bread
Serves 2 to 3
Procedures:
- Mussels: In a large hot sauté pan with butter, add in the shallots, garlic and jalapeño and caramelize. Once brown, add in the curry paste and sauté for 2 to 3 minutes.
- Next add in the mussels and sauté for 2 to 3 minutes. Deglaze with wine, then add in the coconut milk, lime zest and lime juice and let braise on medium-high heat until the mussels open up. Adjust the seasonings with salt and pepper.
- Goat Cheese: In a medium sized bowl whisk together lemon zest, lemon juice and goat cheese until completely combined. Spread the goat cheese on slices of Artisan bread.
- To Plate: Simply pour the mussels into a large bowl and top off with fresh cilantro leaves. Serve the mussels along side the to goat cheese, bread and with a chilled glass of Starborough Sauvignon Blanc.

Fat is Flavor!
Long ago, before refrigeration, meat was made into a confit, which meant it was rubbed with salt, herbs and spices then cooked and stored in fat, to preserve it for the winter ahead when there would be little fresh meat available. These vats of fatted meat would be stored in the cool cellar for months with no adverse effect – the salt cured the meat and inhibited bacterial growth and the fat sealed out air. Pork and duck rillettes, duck leg confit and whole goose livers in fat gave the farmers and village people the extra energy necessary to keep warm and go about their winter labor. Any meat, game or poultry made into a confit is flavorful and succulent.
I like to make confit when the weather turns cold. Not that I don’t sometimes make it in the summer, I just think it makes more sense to have the oven on for a few hours when it can do double duty and also heat the house. Bulky cold weather sweaters also help to hide the end result of gorging on duck confit and one of my favorite by products of confit – Rillettes!!
Rillettes make a great partner to fragrant, fruity and high acid white or red wines. I particularly enjoy rillettes slathered on homemade sesame crackers washed down with RSV’s Los Carneros Pinot Noir. Sesame pulls the rillettes and crackers together to make a taste sensation and the crunch of the crackers offset the rich fattiness of the rillettes.
There are plenty of commercially available rillettes if you don’t have time for homemade. I do recommend making your own crackers if you go this route. The crackers are simple to make and won’t take up a lot of your time.

Duck Confit
In the Jordan kitchen, there is always a batch of this confit recipe in some stage of preparation. Whether it is showcased in risotto, terrines, cassoulet, rillettes or simply warmed through and crisped on the bone in a cast iron pan, duck confit makes for a versatile ingredient or main course.
Ingredients
1 Tbsp Sarawak black peppercorns
1 Tbsp coriander
1 star anise
6 duck legs with thighs
3 Tbsp sea salt
1½ Tbsp Demerara sugar
2 bay leaves
5 marjoram sprigs
10 thyme sprigs
3 shallots, sliced
3 garlic cloves, crushed
5 cups duck fat
In a large non-reactive bowl, combine toasted spices, sea salt, sugar, herbs, shallots and garlic. Press duck legs into mixture to coat each leg evenly. Tightly cover bowl and marinate in the refrigerator for 24 to 48 hours.
Preheat oven to 200°. In a small saucepan, melt the duck fat. Remove duck legs from the refrigerator and carefully brush marinade from the legs. Arrange the legs in a single, tight layer in an earthenware casserole or heavy lidded 6-quart stock pot. Pour the melted duck fat over the duck legs to cover and place in the oven.
Allow to cook gently until meat is easily pierced and nearly falls away from the bone, approximately 4 to 5 hours. Remove duck from oven, cool and store the duck in the fat. The confit can be stored for a minimum of one week and up to one month, but should be salted a day before you plan to cook it.

INGREDIENTS:
3 Tablespoons Worcestershire sauce
3 Tablespoons soy sauce
1 teaspoon minced garlic
2 Tablespoons olive oil
¼ cup dry red wine
2 Tablespoons red wine vinegar
1–2 thick top sirloin steaks, about 1¾–2 pounds total
½ lb. very large fresh mushrooms (portobello or porcini)
Olive oil for brushing mushrooms
1–2 teaspoons truffle oil
1 Tablespoon fresh tarragon leaves, chopped
INSTRUCTIONS:
Mix first 6 ingredients in a flat non–reactive dish. Add the steak and turn to cover both sides well. Cover and marinate in refrigerator for several hours, turning once.
Bring meat to room temperature while you prepare a medium–hot barbecue fire. Quickly rinse and dry the mushrooms. Drain off marinade from meat and bring it to a low boil for 1 minute in a small saucepan.
Brush mushrooms generously with marinade and cook them and steak on the hot grill, brushing mushrooms with marinade 2–3 times more and turning both as needed. Mushrooms need less heat and will be cooked first; remove them and continue cooking meat until it reaches desired doneness. Remove steak from heat and let it rest with mushrooms in a warm place for several minutes.
Cut the mushrooms in large pieces (quarters if possible) and pile them irregularly on individual warm plates. Slice meat about / inch thick and arrange beside the mushrooms. Drizzle all with accumulated cooking juices and truffle oil; sprinkle with chopped tarragon. Pass sauce separately

INGREDIENTS (serves 4):
1 block of tofu, the 'firm' variety, not the soft 125 ml soy sauce
4 tablespoons mirin 1 tablespoon lime juice
1 tablespoon very finely chopped ginger
1 tablespoon very finely chopped garlic
200 grams sushi rice
400 grams bok choy 50 grams mini corn, blanched for 1 minute in boiling water
1 red pepper, in rings 1 spring onion, sliced
1 tablespoon sesame oil
2 tablespoons sunflower oil
1 teaspoon black sesame seeds a
few tablespoons cornstarch
PREPARATION:
1 For the teriyaki, mix the soy sauce with the mirin, lime juice, ginger and garlic. Let it rest for an hour to allow the flavors to soak into the soy sauce.
2 Wash the sushi rice well first, then cook it for 12 minutes on low heat in equal parts water and rice.
3 Cut the tofu into whatever shape you want and let it drain well between kitchen paper.
4 Add the tofu to the cornstarch and fry it in the sunflower oil until golden brown and crispy. When the tofu is golden brown, deglaze it with the teriyaki sauce, turn the heat to low and reduce until the sauce is nice and viscous and sticks to the tofu.
5Fry the bok choy over high heat in some sesame oil, add a dash of soy sauce and a dash of water and simmer for two minutes with a lid on the pan so that it remains nice and crispy.
6 Spoon the rice onto the plates and add the bok choy and the slices of tofu. Sprinkle the tofu with the sesame seeds. Garnish the plate with the minimais, spring onion and red pepper.
