| VINIFICATION | Fermentation takes place with the cap emerging in steel tanks and is completed in 14/15 days. This process occurs with temperature and oxygenation control techniques. |
| AGING | after malolactic fermentation the wine is transferred into French oak barrels with a capacity of 500 liters (60% new, 40% second passage). The last two months are assembled in steel tanks until the next bottling. |
| HARVEST | The harvest is done manually using small boxes so as not to compress or break the grapes already in the vineyard. |
| SOIL | Characterized by the Sant'Agata Marl: clay mixed with very fine sand and limestone components . |
| DIRAMMENTS | The selection of the grapes takes place mainly in the vineyard during the entire fruit setting, veraison and ripening phase. 4/5 thinnings are done manually in order to reduce production per hectare and make the bunches all the same, with homogeneous maturation. |
