Description
The base wine of Yatir Winery, which has taken its place in the best restaurants in the country, and shows year after year stability and consistency of the highest quality. The wild, mountain and vegetative landscape of the reserve and Mount Amasa (+859) kiss the Yatir forest and the vineyards, and constitute a unique encounter between the mountain and desert area, the snow and sun, the rock and the earth, representing the nature of the winery’s wines. From there the name of the wine is derived. Until the 2010 vintage, the wine was called ‘Yatir Merlot / Shiraz / Cabernet’. The wine is based on the Cabernet Sauvignon and Shiraz varieties. As in similar climates in the world (southern France, Australia) the combination of these varieties is synergistic and enhances the wine in the peppery structure and freshness of the Cabernet with the fruity softness and smoky seasoning of the Shiraz. The winery also uses varying percentages of Merlot / Malbec / Patty Verdot and Cabernet Franc on screen. The variety of varieties contributes to emphasizing the regional character of the wine over the character of each of the varieties. The wine is aged for about a year in a combination of small barrels (225 liters) and large wooden containers (5,000 liters) with the goal being a wine aimed at fresh fruit and minerality, Without pronounced wood flavors. The ‘excessive character’ is expressed in the solid structure and aroma of Mediterranean herbs (sage, rosemary, thyme) that blend in with the fruit flavors. Bottled and marketed after a further maturation of about two years in the bottle.
