Average age of the vines : Over 40 years.

SURFACE AREA : 0.70 hectares.
Plot located at the place called “Chaffangeons”.

SOIL : Composed of granitic arena. Deep, rich and very silty soil.

CULTURE : Vines worked on biodynamic principles (500, 501, etc.) since 2015.
Vines certified in organic farming. Goblet pruning on 10,000 vines/ha. Alternation of
soil plowing and controlled natural grassing. Association of plants for spraying (nettle, buckthorn, etc.).

HARVEST : Exclusively manual in small 300 kg bins with rigorous sorting on the plot.

VINIFICATION : Carbonic maceration carried out cold (around 10-12°C in the vat) for 10 days, avoiding any handling.
Without sulphur or yeast.

MATURING: 100% in vats for 8 months. Racking and bottling by us, without filtration and according to the moon cycle.
