Specs | SURFACE AREA : 2 hectares in two plots. SOIL : Composed of granitic arena consisting mainly of sand. Poor, filtering and acidic soil. CULTURE : First vines worked on biodynamic principles (500, 501, etc.) since 2012. HARVEST : Exclusively manual in small 300 kg bins with rigorous sorting on the plot. VINIFICATION : Carbonic maceration done cold (around 10-12°C in the vat) for 20 to 22 days, avoiding any handling. MATURING : 50% in 600-litre demi-muid, 25% in 300-litre barrels, 25% in 225-litre barrels for 8 months. Former barrel of at least 6 wines. Racking and bottling by gravity, without filtration, without sulphur and according to the cycle of the moon. Aged in bottle for 10 months before being put on sale. |
