Vineyard | Vincent Carême of Domaine Vincent Carême in the Loire Valley, brings his expertise and techniques from France to Swartland in his Terre Brûlée bottlings. Vincent has found his spiritual home in South Africa where his wife, Tania, is from. The grapes for Le Rouge stem from two blocks of dry farmed, unirrigated vines in the Swartland. The Syrah is trellised while the Cinsault are bush vines. Situated on a gentle north facing slope, vines are 20 years old and set in soils of shale and granite. |
Vinification | The Cinsault is picked early in order to impart freshness to the blend, while the Shiraz is taken at full maturity bringing structure and spiciness. Harvest was carried out completely by hand in the early morning hours. Grapes were selected and crushed (20% whole bunch) and underwent a natural fermentation process. The wine received skin contact for a period of 20 days and was matured for eight months in stainless steels tanks. |
