Process | First, we infuse caraway, cardamom, Saigon cinnamon, coriander, angelica root, orris root, dill seed, fennel seed, star anise, Malabar black pepper, fresh ginger, lemon, lime, Seville orange, and Bergamot orange in non-GMO grain neutral spirit. We then distill this infusion on one of our 1,500-liter Arnold Holstein copper pot stills through a vapor-infusion basket that holds layers of juniper berries, fresh cilantro, and California bay laurel. The remaining ingredients (fresh orange blossoms, Valencia orange, grapefruit, nutmeg, pink peppercorns, fresh dill, and fresh cucumber) are infused and distilled separately. All distillates are then blended, proofed to bottle strength, and filtered to remove visible impurities prior to bottling. |
Cocktail Suggestion | Valley G & Tea Sour 1/2 oz green tea syrup 1/2 oz fresh lemon juice 2 dashes orange flower water 1 egg white Combine all ingredients into a cocktail shaker, then dry shake until nice and frothy. Add ice and shake again to chill. Double-strain into a chilled coupe glass. Garnish with an orange peel. Green tea syrup: To make a green tea cold brew, add one tablespoon of green tea leaves to 16 oz of filtered water at room temperature. Let steep for 6 hours in the fridge. Fine-strain the liquid into a new container. To make green tea syrup, combine the green tea cold brew and sugar in a saucepan and simmer over medium heat. Maintain a gentle simmer and occasionally stir for 10 minutes. The sugar should be completely dissolved. Remove from heat and let it cool to room temperature. Fine-strain it into an airtight container and store it in the refrigerator. (Good for about 3-4 weeks.) |
