Description
Pernod takes back to 1805, when Henri-Louis Pernod established his distillery in Pontarlier, in eastern France, near the Swiss border. Pernod had previously worked with Major Dubied, who had purchased the rights to the first absinthe, created by Dr. Pierre Ordinaire. Pernod would marry Dubied’s daughter, Emilie.After absinthe was banned in 1915, Pernod distillery created this liqueur, which relies upon anise for its core, liquouricy flavour.
Pernod Paris is made from fennel and star anise distillates, which is blended with 14 further herbal distillations, including veronica, chamomile, coriander and mint.
The result is a funky, herbaceous and earthy aniseed liqueur, complex and slightly medicinal.
Pernod Paris works particularly well served with lots of water and ice, to make a cloudy, herbal long drink
