Description

Merlet C² Cassis & Cognac combines the know-how of liqueur and distiller Merlet, while revisiting an old digestive French countryside, the Mêlécasse (mixture of eau-de-vie and crème de cassis). C² Cassis is the blend of natural blackcurrant infusions made with cognacs from the distillery. The infusions used are the same that serve as bases for Saintonge Merlet’s Crème de Cassis. They are mixed with cognac, represented at least 60% in alcoholic ingredients. Finally sugar is added to obtain the final liquor. The marriage of cognac and blackcurrant truly creates new aromas and complexity.

The ratio sugar / alcohol is not too important, Merlet C² Cassis is perfect for digestive ice, and remains an excellent appetizer when lying with carbonated water or tonic.

Merlet C² Cassis 35 ml
Vermouth white / bianco 5 ml
Lemongrass tea 100 ml
Simple sugar syrup 5 ml (1 tablespoon)
METHOD
Pour all the ingredients into a siphon (whipped cream) and put in the fridge or in an ice bath. Once cooled, load the siphon with a CO2 cartridge. Let the gas escape by holding the siphon upright, head up, without allowing the liquid to escape. Then load the siphon with two C02 cartridges. Flip the siphon, press the lever and pour the carbonated liquid into a Collins glass filled with ice cubes.
