Chichibu distillery was built on a small hill in the Chichibu-city. The environment is unique as Japanese. It’s very hot and humid in the summertime, but on the other hand, it’s extremely cold in wintertime with the temperature is dropping to -10℃ in the morning and evening sometimes. The extreme environment is helping the maturation of whisky and creating original character influenced by local climate.One of Japan’s smallest and most sought-after distiller’s, Ichiro Akuto’s Chichibu distillery is also the youngest by far, having been founded in 2008. In fact, it was the first new distillery built in the country since the 1970s. Ichiro is the third generation of his family to be involved in brewing, but he runs his distillery with a slight experimental touch, all while paying deep homage to the traditions of Scotland.
