David Chapel and Michele Smith met in 2013 when Michele, head sommelier and director of the 3-star Michelin restaurant The Chef’s Table at Brooklyn Fare, Brooklyn, New York, was tasting Beaujolais. At the time, David worked in the vineyard and cellar at Domaine Lapierre. When Mathieu Lapierre, co-owner of Domaine Lapierre, was unable to accommodate Michele for a visit, he sent David in his place. Subsequently, David moved with Michele to New York for almost three years. In 2015, they made the decision to return to Beaujolais and move forward with the project of creating Domaine Chapel.
