Ask anyone who knows him to describe Frederic Cossard and you’ll hear the same word used again and again; a “character”. He’s certainly that: a rogue winemaker with enough personality and strength of conviction to go fully natural and organic in a region as conservative as Burgundy’s Cote d’Or. Cossard’s father tried to get him to follow in his footsteps as a dairy farmer, but after a decade spent in milk, Frederic found his calling in wine. He worked as a broker for years before finally opening his own winery (Domaine de Chassorney) in 1996 to pursue his ambition of an organic, natural winery making world-class Burgundy. While Fred uses the Domaine de Chassorney label to produce wines made with his own home-grown fruit, he experiments with different plots of grapes from vineyards across Burgundy and the Jura made by like-minded growers and compatriots.
