Description
Domaine du Collier is the winery run by Caroline Boireau and Antoine Foucault; The latter is part of the famous Clos Rougeard family. An endeavour that began 20 years ago in the town of Chace, in the Loire and covers 6.5 hectares of vineyards. Vineyards that are cultivated according to the organic and biodynamic agriculture principles with the intention of revealing the most attractive characteristics of the Saumur denomination.
Domaine du Collier Saumur Blanc comes from vineyards planted in calcareous soils that are rich in limestone. All the work in the vineyard work is carried out manually and the yield is limited to an average of 35 hl / ha. They practice organic and biodynamic agriculture, with no chemical products, instead using natural preparations and treatments. The harvest is carried out manually at the optimum point of ripeness.
When the grape reaches the winery, vinification begins. Domaine du Collier Saumur Blanc ferments spontaneously with native yeasts in French oak barrels at a low temperature; 80% in used barrels and 20% in new ones. It stays there to age for between 2 and 3 years without racking. There are no additives of any kind during vinification or aging.
