Pablo and Vincent Chevrot proudly returned to full organic status with a bang in 2019. Their focus remains firmly in the vineyard, employing two horses to work the vines and focusing on green manures planted between the rows to manage the availability of water, both in times of drought or excess, and which turned out to be key in both the 2019 and 2020 vintages.
