Description

In keeping with the style we established more than a quarter century ago, Chandon has captured the expressive elegance of California`s vineyards in Brut Classic. The wine presents full flavors that move seamlessly across the palate. Chardonnay provides front palate creaminess and contributes a firm structure and vibrancy while Pinot Meunier adds mid-palate dimension with hints of cherry cream. Pinot Noir, which forms the majority of the cuvée, gives the wine length, persistence and a lingering flavor. To ensure the continuity of style and quality that has made Chandon one of America`s classic sparkling wines, our Brut is blended with ten to twenty percent Reserve wines from prior harvests.

Wine Enthusiast 87 points – his blend of 57% Chardonnay, 41% Pinot Noir and 2% Pinot Meunier is drier than the winery’s Extra Dry Riche. It is softly textured, layered in green apple and pear, and offers a medium finish. A versatile wine for pairing, it makes a good go-to for larger gatherings.

This wine offers the balance and elegance that has become Chandon`s hallmark style. When you taste Brut Classic, look for nutty flavors with hints of brioche that build to a refreshing dry finish. The wine delivers complex apple and pear characteristics accented by citrus spice over notes of almond and caramel in the bouquet.

Composition: Pinot Noir Chardonnay Pinot Blanc Pinot Meunier Aging: 18 months on the yeast

Vinification:

Grapes were gently pressed, fermented into wine, blended and bottled along
with yeast and sugar to start the second fermentation that makes méthode traditionnelle wines effervescent. After aging, the wine is clarified by riddling, a process which moves the yeast sediment to the neck of the bottle. The necks are frozen, and the yeast is expelled in a process called disgorgement. To balance the acidity before applying the cork, each bottle is topped off with a small amount of liqueur, sugar dissolved in reserve wine, also known as the dosage. The wine is then aged at least six additional months before release.

Spiced Apple Punch
Punches are made for holiday parties. Just mix and then point your friends towards the bowl and you're set.

2 oz Spiced Simple Syrup (1 cup water; 1 cup granulated sugar; 2 cinnamon sticks; 1 small piece nutmeg)

2 1/2 cups apple cider (unsweetened)

1/2 cup fresh lemon juice

2 oz honey

750ml (1 bottle) Chandon Brut Classic

Make the simple syrup: Combine all ingredients in a small saucepan. Bring to a boil. Remove from heat
and let sit 30 minutes. Strain the syrup into a clean container and refrigerate. Discard the cinnamon and
nutmeg.

Combine the apple cider, lemon juice, honey and spiced simple syrup a pitcher, dispenser or punch
bowl. Add the Brut and fill with ice. Serve.
