Genepy, or génépi, showcases the true flavor of wormwood, a flowering plant that has connotations to madness and hallucinations. While this is greatly exaggerated, the compound thujone does exist in grande wormwood, the only species allowed in true absinthe. But there are over 200 varieties of wormwood grown all over the world, and in the alps, the native varietal adapted to these high elevations is used to create this deliciously herbaceous and slightly bitter liqueur. The Alpe distillery has been operating in the Aosta Valley since 1948, brewing and distilling various mountain herbs and roots.
