CHAWAR is a raw agave spirit from the Andes mountains.
In the highlands of Ecuador, there is an ancestral tradition of harvesting the agave sap.
For nearly a millennia, indigenous women have passed down the technique of hand-harvesting the raw sap from the mature plants (~12+ years) of the agave americana variety, growing in the high altitude volcanic soils of tropical Ecuador.
Highland communities use the sap as medicine, food, and alcohol.
Chawarmishki is a Quechua word which means “sweet raw”, referring to the sap.
We work with Ecuador’s first all women’s indigenous harvesting co-op to source raw agave sap at 3100 meters. The sap is then naturally fermented and double distilled at our farm in Yaroqui City.
