At first glance, a dark and deep garnet color announces a beautiful tasting. The approach is fragrant, we find floral notes, the fruit is dense and juicy, the aromas are manifest, making this wine airy. The texture is powerful and silky, the aromas of black fruits mingle with nuances of spices.
The wine unfolds in the mid-palate. The tannins are of great finesse and reveal themselves in the finish.

Description

Situated on one of the two highest points in Saint-Emilion, Château Destieux, a single-holding property, overlooks the Dordogne Valley as far as the hills of Montagne Saint-Emilion. For nearly 50 years, Château Destieux has belonged to the Dauriac family, who have passionately nurtured the constant progression of this vintage, with a single ambition: to do everything in the vineyard and in the cellar to produce each year a concentrated wine, both elegant and robust, an aristocratic expression of a privileged terroir.

Winemaking

• Hand-harvested at optimum maturity
• A first sorting bunch by bunch,
• Followed by a second sorting seed by seed in order to select the best seeds
• Vat room with 8 truncated wooden tuns equipped with a temperature regulation device, allowing plot-by-plot vinification
• Cold pre-fermentation maceration between 5-10°C
• Alcoholic fermentation takes place at 20-30°C with daily manual punching down
• Post-fermentation maceration at 30°C
• Malolactic fermentation: 100% new French oak barrels

Vineyard management

• Rigorous pruning combined with disbudding,
• Selective head de-budding
• Green harvesting (a maximum of 7 to 8 bunches per vine) allows both to avoid any contact between the bunches and to encourage their full development
• Progressive defoliation at the height of the bunches results in full sunlight for the grapes and their perfect ventilation, eliminating any risk of prolonged humidity and therefore of rot
