Plot of 0.35Ha located in Binissalem, within the estate of Sa Fiola. Sols de Call Vermell, clay that owes its red color to the high content of non-assimilable iron. Plot with shallow soils, does not contain gravel on the surface. Escursac is one of the native Mallorcan varieties recovered at the beginning of the 21st century. It has a high aromatic potential, high acidity and low alcohol content. Viticulture with minimal intervention, maintaining the plant cover in cold seasons, favoring its biodiversity. Minimal treatments, sulfur for pathogen control. Annual production less than 4000kg/Ha.

Manual harvesting in boxes of no more than 15 kg, grape selection on a selection table. Fermentation takes place in stainless steel tank, 50% whole fat and 50% crushed.; at a controlled temperature of 19-20ºC. Maceration for 8 days, with daily pumping. Soft pressed (55% yield). Resting in stainless steel with its own lees for 4 months. No clarifying agent is used.

Description

The origins of Ca’n Verdura go back six generations, working and cultivating the vineyards of Binissalem between estates and cellars that for centuries have surrounded the wine village par excellence of the island of Mallorca. Following this tradition, the project could only be understood in one way, making wines with Mallorcan character, indigenous varieties such as Mantonegro, Callet and Moll; in short, Binissalem wines. Viticulture in recent years has been introducing varieties from other areas, proclaiming them noble to the detriment of the indigenous ones. The idea of ​​Ca’n Verdura is to break with this fashion and show that with Mantonegro you can make wines with great representativeness and personality. In 2010, the adventure of Ca’n Verdura begins, without its own cellar, using Mantonegro from the godfather’s farm, recovering the variety and adapting it to modern production methods. It was the first step of what would become, two years later, the Celler Ca’n Verdura. This year nearly 700 bottles were produced. 2012 arrived and the doors of Ca’n Verdura opened, in an old garage in the center of the town of Binissalem. With its own cellar, the production of the Ca’n Verdura family of wines begins, looking for the nuances that can be offered by the different viticultural boundaries of the Binissalem region. During the following years, Ca’n Verdura has matured, always maintaining its original essence, character and family tradition, while adapting to the demands of each vintage. In this way, the ideas and intentions preserved from the beginning have been embodied.
