| Vinification | The harvest is manual, carried out by two or three successive sortings in the plots of golden grapes or at the beginning of botrytization (Botrytis brings “fat” and fullness). Optimal enhancement of the aromatic character of Chenin thanks to temperature control during fermentation. Partial malolactic fermentation. Careful aging on lees with stirring in 400 liter barrels for approximately eleven months. |
| Soils and climates | Shallow soils are composed of sandstone shales. The meso-climatic influence of the Loire allows the production of highly mature white wines, of which Savennières “Le Clos du Papillon” is one. |
| Location | Savennières, a small village located about 20 km southwest of Angers and north of the Loire, forms an enclosure in the shape of a butterfly sharing its wings between several producers. Located just 400 m from the Moulin du Gué, it has a more hilly, south-west exposure, a more stony terroir benefiting from exceptional sunshine. |
