| Winemaking | This Cabernet Sauvignon is picked at the peak of flavor development from top sites across Napa and Sonoma. Fermentation occurs in temperature-controlled stainless steel tanks with frequent pump-overs to maximize color and flavor extraction. The wine is then aged for 20 months in French oak barrels, 20% new, for a warm, vanilla complexity. A splash of Petite Sirah, a classic Napa variety during the Prohibition era, is blended in for authenticity and an infusion of body and spice. |
