Pasta Bolognese

Bolognese sauce, known in Italian as ragù (alla) bolognese, or simply argue is a meat-based sauce originating from Bologna, Italy. In Italian cuisine, it is customarily used to dress  "tagliatelle al argue" and to prepare " lasagne alla bolognese".

We only produce this Chianti Classico Gran Selezione in outstanding vintages. When we do make Riserva Ducale Oro, we start by harvesting the grapes by hand, mostly from our Gretole estate in the Chianti Classico appellation. The vineyard lots are vinified individually to preserve their specificity to the land. We age the wine in oak, stainless steel and concrete vats for 36 months, twelve months longer than required by Italian law. The wine then spends additional months in bottle before release.

The grapes for this wine are produced in the Maule and Colchagua valley. The Maule Valley gives stricture and color to the wine while the Colchagua Valley adds soft tannins and red fruits. This blend is a perfect combination between a hot valley (Colchagua) and fresh valley (Maule).  This wine is made from 100% Cabernet Sauvignon, harvested in April. The grapes are fermented and then aged in stainless steel for 12 months.

This parcel as a whole is called Rosey but in the 18th century a small parcel called "Sept Ranches" appeared in the southwest corner near Plantenay. Ranche is a form for the word "ronce " from the Latin ‘RUMEX’ which means "small sorrel, a species of stinger plant". Other variants such as "ronche", "ronde" and "ronze" appear in the place-name history of Burgundy.
