| PREPARATION | All work in the winery is governed by the principle of “Extraction without Modification” to maintain the unique character of the grapes and soil. Night harvest at temperatures below 15°C, skin-on cryomaceration to extract varietal aromas in an inert atmosphere. Gentle pneumatic pressing, followed by natural decantation of the must at low temperature. Low-temperature fermentation with proprietary yeasts reveals the varietal aromas of Verdejo without external modification. Aging on its own fermentation lees for at least four months to achieve greater volume and personality in the wine. Production with very low levels of SO2 throughout the entire process. |
