Rocca Nigra expresses the character of its terroir and the plant associated with it. Cabernet Sauvignon, a restrained grape variety, thrives on the rocky soils of slate schists and Armorican sandstone. There, it produces wines with an intense, deep color. The nose is dominated by aromas of black fruits, licorice wood, and roasted coffee. The palate is generous, powerful, and velvety. Served at room temperature after a good year of resting in bottles, it will pair well with grilled meats and meats in sauce, including strongly spiced dishes. Decanting at room temperature will be very beneficial.

THE HARVEST

ROCCA NIGRA is a red wine made from grapes harvested at their peak. The grapes' ripeness is checked several times a week to ensure they reach full phenolic maturity.

VINIFICATION

The destemmed harvest undergoes a long maceration (40 to 50 days), however, delicacy is preferred to violent extraction. Initially: several pumping over, racking and stirring are carried out, then the marc is completely submerged. We favor gentleness and time.

BREEDING

Bottling takes place after 18 months of aging and fining with fresh egg white (fining for fine red wines). This wine generally ages for 8 to 15 years.

VINEYARD MANAGEMENT

(Organic Agriculture) We attach great importance to respecting the vine and its environment, the vineyard is plowed and receives no herbicides or synthetic pesticides. Yield: 35 hl / ha

GRAPE VARIETY AND TERROIR

It comes from the Clos des Collinets, Goupil, Guenneries and Cormier vineyards. These well-exposed rocky hillsides of slate schists and Armorican sandstone from the primary era (Ordovician and Silurian) require a grape variety that can tolerate a reduced water supply: Cabernet Sauvignon. The plant's roots are forced to descend deep into the schist faults to draw their nourishment.
