Specs | Average age of the vines : Over 40 years. SURFACE AREA : 0.70 hectares. SOIL : Composed of granitic arena. Deep, rich and very silty soil. CULTURE : Vines worked on biodynamic principles (500, 501, etc.) since 2015. HARVEST : Exclusively manual in small 300 kg bins with rigorous sorting on the plot. VINIFICATION : Carbonic maceration carried out cold (around 10-12°C in the vat) for 10 days, avoiding any handling. MATURING: 100% in vats for 8 months. Racking and bottling by us, without filtration and according to the moon cycle. |
