Steuben 90% from Yamagata prefecture, Yama Sauvignon 10% from Iwate prefecture. The wine is blended destemmed Steuben which was fermented on skins in amphora for 12-14 days and small amount of destemmed Yama Sauvignon which was fermented on skins for 33 days. in amphora for 6 months. The raw materials are Steuben from Yamagata Prefecture and Yama Sauvignon from Iwate Prefecture. Steuben is destemmed and skin fermented for 12 to 14 days in an amphora*. After pressing, it was returned to the amphora and aged for 6 months, and blended with Yama Sauvignon in the spring of 2021. This red wine combines the juiciness derived from Steuben with the firm acidity derived from wild grape varieties, and has a compact lingering finish that makes it easy to drink.
