| Vinification | "Bianchetto" comes from 20-year-old vineyards planted in volcanic soils, rich in iron and minerals. Once the grapes have reached optimum ripeness, they are harvested by hand and taken to the winery in Gradoli village. Fermentation begins with native yeasts in steel tanks. The wine ages in large oak vats for 5 months before bottling. Unfined, unfiltered, with no added S02. |
