Description

Il Grillo, one of the characteristic native vines of western Sicily, finds its home on the high hills of the Paradiso estate, in the Contessa Entellina (PA) area. The organic grapes are harvested by hand in early September and de-stemmed. Spontaneous fermentation and maceration with the skins for 6 days. Aging in steel on the fine lees for 9 months. Bottled without filtration.

Vinification

The grapes are destemmed and then macerated on the skins for 4 days in neutral barrels and stainless steel tank. Ambient yeasts used.
