Terroirs: Sandy-clayey on Turonian limestone (tuffeau). Manual tillage, no chemical weeding, no synthetic product, ECOCERT certification.Harvest: Manual, in the morning to maintain freshness for this sunny vintage.
Vinification: Whole harvest in 50hl concrete vats, 3 weeks of maceration without pumping over, indigenous yeasts. Devatting is done hot.
Breeding: End of alcoholic fermentation followed by malolactic fermentation in concrete vats. 9 months aging.
