Pumping-over and punching the cap based on daily tastings
Free-run juice and press-juice blended on devatting
Ageing 70% in barrels and 30% stainless steel tanks for 11 months
Blended and racked in September 2015 for another 8 months ageing in tanks
Bottled in June 2016
