The signature variety of Jura is the white Savagnin grape, which is used exclusively in the wines that are most closely associated with Puffeney’s name. Vin Jaune (“yellow wine” in French) is a white wine made from Savagnin that is barrel aged under a thin layer of yeast called a voile, which is French for “veil” and similar to a flor in Sherry.
