Mizu Shochu

$34.99

Classic barley shochu style, made from a 400 year old recipe of 67% two-rowed barley and 33% black koji rice. At 35% ABV it is more concentrated like shochus of old, and makes a great alternative to vodka in cocktails, with much more body, richness and depth. On its own has a floral, sake-like aroma with notes of banana bread and fresh grains. Buttery texture. Drinks like a young whisky with hints of ripe melon and vanilla custard.

Description

Munemasa is one of Japan’s youngest distilleries with deep roots in the past. The current company was founded in 1985 in the town of Arita in southern Japan, but the Munemasa family has over 120 years of experience making sake and shochu. Originally based in Hiroshima, they left the area following the destruction of the Second World War and resettled in the Arita, famous throughout the country as the birthplace of Japanese porcelain and its traditions of craftsmanship. They make shochu that looks past current fads to older recipes and methods, as well as new ingredients and techniques that have not been tried before. The resulting Mizu shochu brand can be appreciated by purists and people new to the category looking for something unique.

THE MUNEMASA SHUZO CO.

Mizu (the moniker for 美鶴乃舞, Mizu-no-mai) is proudly distilled by the Munemasa Shuzo Co. of Arita, Japan. While honoring the traditional shuzo methods, Munemasa is driven by a passion to craft the unexpected and to create shochu of uncommon character. Founded in 1985, Munemasa infuses creativity, innovation and a unique perspective into the traditional Japanese spirit. This is the way of our master distillers, Wada-san and Okoba-san, who make the Mizunomai in the artisanal, old-style method, while adding unusual and unconventional twists for the more bold shochu lover.

GENUINE HONKAKU SHOCHU

Mizunomai is a ‘honkaku’ shochu (本格焼酎), meaning genuine or authentic, as it is handcrafted and single distilled in the traditional Japanese way. Distilling the ‘moromi’ mash just one time captures the true essence of our Saga grown barley and black koji rice by preserving their naturally occurring flavors and aromas. The result is a smooth, pure, natural taste that is uncommon and exquisite.

The honkaku method of single distillation dates back to the 16th century and originated in the mountain villages and lush valleys Kyushu in southwestern Japan. It is here in small town of Arita, located in Saga prefecture, where the Mizu Shochu is produced.
