A deep, brilliant purple-red in colour. The spacious nose offers generous oaks notes but well integrated with spice and cherry impressions. The palate offers a firm acidity, ensuring good savouriness and length, and impressive continuity with the aromatic impressions of the nose. Vinification

The ripe clusters are handpicked into ventilated 20kg boxes, with rigorous quality selection, then brought into the cellar within a few hours. After the clusters are de-stemmed and pressed, the must is fermented at 32°C, with frequent, gentle pumpovers. The wine is given a medium-long (ca. 180) hour maceration on the skins, then goes to oak barrels for spontaneous malolactic fermentation. Maturation: 8 months in steel; one part (ca. 40%), in new oak for 6 months.

Ideal with any raw meat antipasti and with aged cheeses.
