When making Intercept Chardonnay we target bright acidity with a rich mid-palate created by the extended sur lie aging. Made from a single vineyard, our Chardonnay was brought in in the early morning hours and gently pressed. The juice fermented in barrels (a blend of French and Eastern European, 25% new) and stainless steel. The wine underwent malolactic fermentation and aged sur lie for 6 months.
